Google’s own “What’s New in GCP” presents a weekly digest of what’s been going on - good to review every now and again if you haven’t hit the main blog in a while.
Google, top level
Yeah, ikr, but sometimes RTFM really can work if you’ve heard about something specific and need to dive in. Not always the easiest to navigate though, so be prepared to spend some time understanding how information is organised for each offering (Overview, Guides, Reference, Resources across the top, further links, tutorials etc on the LHS), as in the following pic:
Each service or feature has its own Release Notes section under the resources tab
You can also get XML feeds of these notes if it’s easier or a single feed that combines all products.

Much more detailed, but worth an occasional quick search if you heard about something on one of the other sources

The Google Cloud Developer's Cheat Sheet
Need to really quickly know the difference between Datatore and Spanner? DataProc and DataPrep? Ant and Dec..( stop it - Ed.) - then look no further than this handy cheat sheet, with all of the GCP services described in four words or less. A nice one to have bookmarked.
